Simple Summer Meals with Smithfield Marinated Fresh Pork @ Safeway!

My all time favorite thing about summer is sharing delicious food with friends al fresco style!

Whether it’s a barbecue or a simple outdoor party, there are endless ways to gather friends around for a summer feast. Growing up in Dallas, Texas, I am a lover of any type of barbecue food. I am pretty much addicted to barbecue sauce! The spicier the better! I love the idea of sitting out on the porch by the lake in the summer time with a delicious plate of barbecue food, good company, and a glass of rosé of course!

When it comes to my favorite barbecue recipes there are many that come to mind. Pretty much anything that has barbecue sauce and bacon involved, you’ve got me hooked. I recently have been introduced to Smithfield Marinated Fresh Pork from Safeway and am a huge fan of these delicious cuts of pork. They come pre-seasoned and can simply be cooked in the oven or grilled, literally no prep needed! Real flavor, real fast! They make for a simple week night meal and even better, a summer time feast with friends! They can easily be found in the fresh meat section at Safeway.

Hosting a cook out with friends can get a little overwhelming. There are usually a lot of people to feed and most of the time I personally feel like I am in the kitchen rather than drinking rosé with my guests. So, these Smithfield Marinated Fresh Pork are the perfect solution to making summer time entertaining easier! You are able to either cook them in the oven or throw them on the grill and have dinner ready in 30 minutes or less. My fiancé and I recently got a new grill and we are so excited to cook anything and everything we can on it! This is the perfect meat to start with!

An easy cook out recipe? Using Smithfield Applewood Bacon Pork Loin Filet, coleslaw and bacon, these Summertime BBQ Sliders can be made in less than 30 minutes and are sure to be a crowd pleaser! Serve them with a peach and goat cheese salad with balsamic dressing and a bottle of your favorite wine (or beer!). These sliders are not only great for a summer cookouts, but they also make for an easy tailgating recipe (just pre make the coleslaw and bacon), picnic or family dinner.

Summertime BBQ Sliders

Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins
Serves: 4-6

Ingredients

  • Smithfield Marinated Applewood Bacon Pork Loin Filet
  • Thick Cut Bacon
  • Your favorite barbecue sauce
  • Slider buns

For the Coleslaw:

  • 6 cups shredded cabbage
  • 1 cup shredded carrot
  • 1 cup mayonnaise
  • 1/4 cup white wine vinegar
  • 1 teaspoon celery seed
  • 1/4 cup sugar
  • Salt and pepper

Directions

Cook the Smithfield Applewood Bacon Pork Loin Filet by following the directions on the packaging (usually 30minutes in the over per pound at 375).

To cook the bacon, place it in the oven the last twenty minutes the pork cooks, until crispy. Let cool and pat off the excess grease.

For the Coleslaw:

In a large bowl, combine cabbage and carrots. In a smaller bowl, make dressing by combining mayonnaise, vinegar, celery seed, sugar, salt and pepper. Toss dressing into cabbage mixture and let chill.

To assemble the sliders:

Butter the inside of each bun and place on the grill for 3-5 minutes until crispy. Slather the inside of the bottom bun with your favorite barbecue sauce. Place a small cut piece of the pork on the bun, top with bacon and coleslaw! Serve warm!
