Trust me when I tell you this is the perfect recipe to make to wow your guests this fall!
I partnered with Meadow Gold dairy to create a fall recipe that was easy to make for your fall dinner parties and even your thanksgiving menu! As the weather finally starts shifting to colder temperates here in Colorado I’m leaning into all things cozy! Setting a cozy environment in our home all year round is my main goal when it comes to decor, entertaining and the food we serve. I always want our guests to feel well taken care of and like they never want to leave. Simple things you can do for your home is creating a cozy spot for guests to lounge while sipping on a fall cocktail (think, lots of blankets on your couch and cozy pillows) and having candles lit that smell of pumpkin, santal and even sandalwood. When it comes to creating cozy meals this time of year I am always looking for something that is easy so I can too be cozy with my guests in my favorite spot on our couch. This easy fall dinner party meal is the exact thing to make. The creamy mashed potatoes are a crowd pleaser and you will wow your guests by pairing them with this very simple beef bourgeon recipe!
Creamy Mashed Potatoes
Ingredients
- 6 Garlic Cloves
- 4 pounds Yukon gold potatoes peeled and quartered
- 2 cups Meadow Gold heavy cream
- 2 cups whole milk
- 8 fresh sage leaves
- 3 sprigs fresh thyme
- 6-8 tablespoons salted butter at room temperature
- kosher salt and black pepper
Instructions
- In a large dutch oven, combine the potatoes, heavy cream, milk, garlic cloves sage, and thyme. Bring to a gentle boil over medium heat and cook 20-25 minutes, until the potatoes are fork-tender.
- Drain the potatoes, reserving all of the cream. Discard the thyme and sage. Press the potatoes and roasted garlic cloves through a potato ricer. Then add them back to the warm pot. Alternately, you can add the potatoes back to the pot and mash with a potato masher.
- Over low heat, add 1 1/2 cups of the reserved cream and the butter. Continue to add more of the cream until your desired consistency is reached. Season the potatoes with salt and pepper.
