Lunch at Summit House Grill and Tap

With all this wedding planning going on and the holidays approaching, sometimes you need a break.

Finding time for Jeremy and I to just be a couple together has been hard the last few weeks between traveling to New York to find my wedding dress, work, school and family in town for our upcoming engagement party. There is a lot going on! Today though, I thought it would be nice to carve out some us time and have lunch near his work. Thanks to Colorado Mills Mall for treating us, we had the most delicious little lunch and a little bit of us time.

If you aren’t familiar with Colorado Mills Mall, it is just outside of Lakewood, Colorado and only 7 miles west of downtown Denver. This shopping area has literally everything you can imagine. From delicious restaurants, shops, Whole Foods, Target and more, it is a one stop shopping area. Between the mall and Denver West Village campus there are combined 33 dining choices from fast casual to major restaurants. On our little day date, Jeremy and I chose to have lunch at Summit House Grill and Tap, a new place we have never tried. We aren’ picky eaters and tend to try to eat healthy (especially when prepping for our 2017 nuptials!) , so the menu had great selections of delicious and healthy foods. Summit House was filled with Colorado “vibes” in their decor, menu and most importantly their beer list. I also loved visiting this restaurant today because it was fully in the Christmas spirit!

Jeremy and I chose to split a sandwich and soup today, as we have been indulging a lot in holiday sweets! We chose a BLAT (bacon, lettuce, avocado, and toast) sandwich along with their soup of the day, sausage chowder. To start, we had their spinach and artichoke dip which was INCREDIBLE! Paired with veggies and pita bread, it was the perfect way to start our meal. To top off our meal we each decided we were in full deserving of a mid day beer (I chose cider, I am not a beer drinker). The atmosphere was very relaxed and perfect for catching up on our days and anything else happening in our lives. Overall, it was a great way to get away just the two of us and try something new!
