This recipe is to die for! And the perfect treat to get you more in the mood for fall and Halloween! A these cookies, a bowl of popcorn and an apple cider martini (recipe coming Friday) makes for the perfect cozy fall movie night! Does anyone follow Gray Malin on Instagram? If you dont you should. He is an amazing photographer and a hoot to follow! He posted a movie night photo the other day with two other people each wearing socks like the witches in Hocus Pocus, I mean how adorable is that? Definitley a must do this holiday season! Enjoy these pumpkin cookies :)
INGREDIENTS:
- 6 tablespoons unsalted butter, softened
- 1/4 cup pumpkin puree
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 cups all-purpose flour
- 2 teaspoon cream of tartar
- 1 teaspoon baking soda
- Pinch of salt
- 1/4 cup sugar
- 1 tablespoon cinnamon
- 1 teaspoon ground nutmeg
DIRECTIONS:
Preheat your oven to 325 degrees F. Line a baking sheet with parchment paper.
In a bowl cream together butter, the sugars, and the pumpkin puree until it is smooth. Mix in the eggs one at a time.
In a separate bowl, stir together flour, tartar, baking soda, and salt. Slowly stir in the dry ingredients into the creamed mixture. Mix it just enough to combine the ingredients, but try not to over mix the cookie dough.
In a small bowl, stir together sugar, cinnamon, and ground nutmeg.
Measure out heaping tablespoons of dough. The Dough is going to be sticky, so drop each heaping on the baking sheet and sprinkle the sugar mixture on top.
Bake the cookies for 11 to 12 minutes until they are slightly puffed and golden brown around the edges. Let the cookies cool before serving. Keep extra cookies in an airtight container for up to 3 days.
