
These skinny pumpkin granola bars are to die for! So delicious and a perfect snack to take on a brisk fall walk or hike (for us Coloradians!). They are simple to make and you wont be disappointed. We have been watching my brothers dog the last two weeks and boy is she hard work. She is a rescue so you can only imagine all the issues that she has. Through the years of having her though she has become such a sweet heart and so loving to Jer and I (she is midly obsessed with her dad..). Let me tell you though, as loving and cute as this dog is there is so much black dog hair all over the house! I have to tame myself from vacumming every day.. because the hair is always going to come back. But boy is it everywhere! Despite this minor hickup.. having a dog is the perfect excuse to get outside tons! We have been having the most beautiful fall here in Denver too! I fully plan on taking these granola bars on our hike this weekend with sweet little Georgia! Enjoy! Oh! And did I mention, they are gluten free and vegan!
INGREDIENTS:
- 3 1/4 cups rolled oats
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tbs flax seed
- 1/2 tsp salt
- 3/4 cup brown sugar
- 1/2 cup pumpkin puree
- 1/4 cup applesauce
- 1/4 cup agave
- 1 tsp vanilla extract
- 1/2 cup chocolate chips (I used mini)
- 1/2 cup Almonds
- 1/2 cup craberries

In a large bowl, whisk together oats, spices, flax seed, and salt.
In a separate bowl, mix brown sugar, pumpkin, applesauce, honey, and vanilla until smooth. Add oat mixture and beat until oats are completely coated. Stir in chocolate chips, almonds and cranberries.
Line a deep pan with parchment paper (seriously worth buying! It is a lifesaver and less of a mess). Press oat mixture into the prepared pan, using a spatula to spread evenly.
