Labor Day Weekend Cocktails

Happy Friday friends! Can you believe it is already September??

Fall is just around the corner but I am planning to soak up the last few days of “summer” this long weekend. Before we start making apple spice martini’s and hot toddy’s to enjoy in our knit sweaters and boots (Ah! Kind of so excited about this!), try some of these delicious summer cocktails that you may have not made yet. I have full intentions on tying a Frosé (frozen rosé) this weekend!

Watermelon Mojito

There is nothing that sounds better than a watermelon mojito on a hot day! Paired with some delicious barbecue chicken, this will be a crowd pleaser!

Ingredients

  • 1/2 small seedless watermelon, cut into chunks
  • 1 bunch mint, tough stems removed, 6 sprigs reserved for serving
  • 1 tablespoon superfine sugar
  • 1 lime, cut into wedges
  • 1 1/4 cups white rum

Directions

  1. In a blender, in batches, puree watermelon. Pour through a fine-mesh sieve into a liquid-measuring cup, pressing on solids to extract as much liquid as possible (about 3 cups); discard solids.

  2. In a large container, combine mint, sugar, and lime. With the back of a wooden spoon, crush mint and lime until sugar is dissolved. Add watermelon juice and rum, fill container with ice, and stir to combine. Serve over more ice with mint sprigs.

Colorado Cooler

Since I do live in Colorado this cocktail felt fitting to share!

Ingredients

  • 1 ounce chilled club soda
  • 3/4 ounce fresh lemon juice
  • 3/4 ounce Simple Syrup
  • 2 ounces malt whiskey, preferably Stranahan’s Colorado Whiskey
  • Ice
  • 2 dashes of celery bitters (optional)
  • 4 cherries, preferably Rainier, pitted, plus 1 cherry for garnish

Directions

In a cocktail shaker, muddle the 4 pitted cherries. Add ice and all of the remaining ingredients except the club soda and garnish. Shake well. Strain into an ice-filled collins glass, stir in the club soda and garnish with a cherry.

Frosé

Like I mentioned before, I have been dying to try this!

Ingredients

  • ⅓ cup sugar
  • ¼ cup water
  • Zest and juice of 1 lemon
  • 1 bottle dry rosé wine

Directions

1. In a small pot, bring the sugar, water, lemon zest and lemon juice to a boil over medium heat. Stir to ensure the sugar is dissolved.

2. Strain the simple syrup and let it cool to room temperature.

3. Pour the rosé into a 13-by-9-inch baking dish. Transfer to the freezer and freeze until relatively firm, at least 3 hours. It won’t freeze entirely, because of the alcohol level, but it should appear set on the surface.

4. Use a spoon to scrape and stir the frozen rosé into smaller crystals. Stir in the simple syrup to taste. Return to the freezer and keep frozen until ready to serve.

Tabernacle Crush

Anything with peaches has my vote for summer time! I am not a Gin drinker, but this cocktail sounds delicious!

Ingredients

  • 1/2 large peach, sliced
  • 6 small basil leaves, plus more for garnish
  • 1/2 ounce fresh lemon juice
  • 1 1/2 ounces gin
  • 1 ounce Lillet
  • 1/2 ounce simple syrup
  • Ice
  • Club soda

Directions

In a tall glass, muddle the peach with the 6 basil leaves and the lemon juice. Add the gin, Lillet and simple syrup. Add ice cubes and top with club soda. Garnish with basil.

White Sangria

Sangria is such an easy recipe to make and great to serve at parties! This White Sangria recipe is full of so many delicious summer fruits that should still be in season!

Ingredients

  • 3 tablespoons sugar
  • 3 shots Calvados or other apple liquor
  • 1 lime, sliced
  • 1 lemon, sliced
  • 2 ripe peaches, cut into wedges
  • 3 ripe green apples seeded and cut into wedges
  • 1 bottle white Rioja Spanish wine or other dry white wine
  • 1 pint raspberries
  • Sparkling soda water, for topping off glasses of sangria at table

Directions

Combine sugar, Calvados, lime, lemon, peaches and apples in a large pitcher. Cover with 1 bottle of Rioja wine and chill sangria several hours. To serve, spoon fruits into glasses or goblets, adding a few fresh raspberries in each glass, pour wine over top of the fruit. Top glasses of sangria off with a splash of soda water and serve.
