Pineapple Cocktail

I recently was on a Palm Beach theme kick. How you ask? Everything I wanted to do – dress, table settings, cocktails, vacation, all had to do with Palm Beach! Weird right? No, because who doesn’t want their entire theme of the day be Palm Beach? Am I making any sense? And yes, you are allowed to have a theme of the day… Today my theme is what I like to call “work out chic” haha. As in, I am staying in my Nike‘s and Lulu’s all week long (to get bikini ready of course!) Anyways! Inspired by last weeks theme, this week I am sharing with you a pineapple cocktail that if you close your eyes while drinking I swear you will think you are in Palm Beach!

Ingredients

1 1/2 ounces pineapple juice
1 -ounce vodka
1 -ounce orange liqueur, recommended: Cointreau
1/2 -ounce freshly squeezed lime juice
Turbinado sugar, for the rim (optional)
Fresh wedges of pineapple
Maraschino cherry

Directions

Chill a martini glass in the freezer. Fill a cocktail shaker with ice. Add the pineapple juice, vodka, orange liqueur, and lime juice. Cover and shake vigorously, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.)

Scatter sugar onto a small plate, wet the rim of the glass and dip into sugar. Strain the drink into the chilled glass. Skewer the pineapple and cherry and drop into the cocktail. Cheers!
