An end of summer dessert.
When I think of a summer dessert, s’mores always come to mind. I love sitting by a campfire in the summer time and roasting marshmallows! It is my favorite memory of summer and probably one of my favorite desserts! Well, since being home from the lake I have been craving a s’mores treat and needed something to satisfy my craving. We do not have a very big backyard otherwise I would be roasting marshmallows every night! These s’mores bars are the perfect little treat to make! Full of all things s’mores (graham crackers, marshmallows and chocolate!), they taste just like a s’more! Make these for your end of summer barbecue or any Labor Day weekend festivity you may have going on!










S’mores Bars
Ingredients
- 3/4cup butter, softened
- 1 1/2cups packed brown sugar
- 2eggs
- 2teaspoons vanilla
- 1cup all-purpose flour
- 1 1/2cups quick-cooking rolled oats
- 1cup graham cracker crumbs
- 2 1/2cups tiny marshmallows
- 1 1/4cups semisweet chocolate baking chunks or milk chocolate baking pieces
Directions
- Preheat oven to 350 degrees F. Line a 13x9x2-inch baking pan with heavy foil, extending foil over the pan edges. Lightly grease foil. Set pan aside. In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Beat in brown sugar until combined, scraping bowl occasionally. Beat in eggs and vanilla until combined. Beat in flour. Stir in oats and graham cracker crumbs.
- Reserve 1 cup of the oat mixture. Spread remaining oat mixture into prepared pan.* Bake in the preheated oven about 15 minutes or until lightly browned. Sprinkle marshmallows evenly over warm crust. Top with chocolate chunks. Dot remaining oat mixture atop chocolate and marshmallows.
- Bake bars about 20 minutes more or until top is lightly browned. Cool completely in pan on a wire rack. Using the edges of the foil, lift the uncut bars out of the pan. Cut into bars. Makes 24 bars.
