Winter Spiced Pear Cocktail

It’s Friday cocktail hour, holiday addition!

It feels like ages since we have done one of these! This Winter Spiced Pear Cocktail could not be more festive for the holidays. The flavors are so delicious, a mix of cinnamon with star anise and pear. Along with egg white and your choice of vodka, gin or even tequila – the frothy cocktail is perfect for the winter. It’s so fun to make and very festive for the holidays! If you plan to make this for more than 4 guests I recommend doubling the recipe.

Winter Spiced Pear Cocktail

INGREDIENTS

  • 50ml vodka (OR gin or a blanco tequila)
  • 25ml fresh lemon juice
  • 25ml pear syrup
  • 1 egg white 

For the spiced pear syrup:

  • 4 pears, cored and cubed
  • 1 star anise, plus more to serve
  • 1 cinnamon stick, broken in half
  • 250g caster sugar 

DIRECTIONS

To make the spiced pear syrup, put the ingredients in a pan with 250ml water and simmer for 20-30 minutes until the flavours have infused. Leave to cool.

To make the cocktail, put all of the ingredients into a cocktail shaker without ice and shake vigorously. Open the shaker, fill with ice and shake again, then strain into a chilled coupe. Place a star anise on the foam to serve.
