
A night to remember.
One of the aspects of the glamping retreat are the dinners that they can prepare for you. You have two options – a BBQ in a box (which we had the first night) and a farm to table dinner prepared by one of their local chefs. I am all for making your own food when on a camping experience, but we couldn’t pass up the offer to enjoy some of their delicious meals.








One of the nights we got to enjoy a real farm to table dinner prepared by their local chef using all local ingredients. When it comes from a garden less than half a mile from the camping site, it can’t get more farm to table than that. Amanda and I opted to share different things off of the menu to get a little taste of everything. From the crisped pancetta in the watermelon salad to the perfectly cooked lamb chop with chimichurri sauce, every bite was an incredible flavor experience.



















The best part of the meal? The dessert of course! As we were served dessert a storm rolled through the camp ground. We moved our table inside of the kitchen tent with Jaime, Lisa and the chef for the last hour of evening as a wind storm came through. Thank goodness for the wine from the Vail Winery! We sat around with everyone and told stories and got to know each other as the storm came through and passed, making this a night we will never forget.
