Boxed Lunch

DSC_3942   The last long weekend of the summer is here. Wow has this summer flown by! While I am excited it is the first day of September, I am also sad to be saying good bye to dear old summer. I am starting the fall with new and exciting projects to come for The Every Hostess on the horizon I can’t wait to share them with you! In the mean time, if you are looking for the perfect long weekend activity, pack a picnic box lunch to take on a hike, to the park or the beach!

These kraft treat boxes from Paper Source are the perfect staple to pack your picnic in. Keep it simple but still tasty! Try a Peach Salad (recipe below), a delicious brie and ham sandwich and a cookie in each box (cookie bag from here). Tie cute labels on each box as well so everyone knows who’s box is who’s (especilly if there are any gluten free people around!).

Peach Salad

DSC_3722 Ingredients

  • Spinich
  • 1 peach
  • sliced almonds
  • goat cheese

For the dressing:

  • 1/3 cup white balsamic vinegar
  • 1 garlic clove, minced
  • 2 tablespoons brown sugar
  • 1/4 teaspoon freshly ground pepper
  • 1/8 teaspoon salt
  • 2 tablespoons olive oil
  • 1 large peach, chopped
  • 1 1/2 tablespoons chopped fresh basil

Whisk together first 5 ingredients until sugar is dissolved. Whisk in olive oil. Stir in chopped peach and basil. Serve immediately.

Fill the bottom of the jar with 1 tbs of dressing. Add spinich, sliced peaches, goat cheese then top with sliced almonds!
