Rosemary Balsamic Chicken with Peaches and Burrata

The perfect summer dish to serve.

I have been LOVING cooking this summer. I have always loved cooking, especially since my hobby/job is to entertain, it’s my favorite aspect of hostessing but after having to quarantine for the last however many months it brought out my love for cooking even more. I recently spent some time in Montana with friends and instead of dealing with social distancing at restaurants, let alone waiting forever for a table since tables are so limited now, I thought it would be fun to cook for everyone every night. Oh my goodness and I was right! It was so fun to have everyone gather around the island and drink wine and chat while I whipped up a delicious summer meal! 

The flavors of summer are my all time favorite. Everything is so fresh, so many yummy salads, and it feels like you have so much to work with. One of my all time favorite summer flavors is peaches and burrata. I recently came across the combination from a restaurant we go to in Montana and let me tell you friends, it’s SO delicious. I teamed up with Annie’s Homegrown and The Feed Feed for this post to create a recipe with Annie’s Organic Balsamic Dressing. I love that Annie’s (based in Berkley, CA) is a 30 year old brand that has always kept their quality of certified organic flavor, no sugar added. What better combo than this delicious dressing paired with peaches and burrata turned into a chicken dish with rosemary, SO yummy friends! You won’t be disappointed! It’s also SO easy to make, especially with adding in the dressing,  and the perfect dish to serve at your next dinner party. 

Rosemary Balsamic Chicken 

INGREDIENTS

  • 1-2 lbs chicken breasts (depending on how many people you are servine, 2 lbs serves 4-5)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh chopped rosemary
  • Kosher salt and pepper
  • ¼ cup all purpose flour
  • ¼ cup dry white wine (such as sauvignon blanc)
  • ¼ cup water
  • ¼ cup Annie’s Organic Balsamic Dressing
  • 2 peaches, sliced
  • zest of 1 lemon
  • 8 ounces fresh burrata, torn
  • fresh basil, for topping

DIRECTIONS 

  1. Rub the chicken all over with olive oil, rosemary, and season generously with salt and pepper. Sprinkle the flour evenly over the chicken and toss to coat, adding more flour if needed to cover the chicken.
  2. Heat a skillet to medium high heat with a 1 tbsp olive oil and the chicken. Sear on both sides until golden, about 5 minutes per side. Reduce the heat to medium low and pour in the wine and 1/4 cup water, breaking up any bits from the pan. Let the wine cook down and then add ¼ cup Annie’s Organic Balsamic Dressing. Simmer the chicken for 5 minutes, until cooked through. Arrange the peaches evenly around the chicken and let the sauce cook for another 2-3 minutes, basting the chicken and peaches in the sauce. Add salt and pepper to taste.
  3. Once the chicken has cooked through, arrange the burrata around the peaches and chicken, add lemon zest, garnish with basil and serve! 

This recipe is seriously so easy and so fun to make. Adding Annie’s Organic Balsamic Dressing gives the dish so much smooth flavor with hints of honey and mustard. I highly recommend this to be your next summer meal! I shop for Annie’s at my local Whole Foods, in Cherry Creek North (Denver, CO).
